Coconut-Curry Lentil Stew Served over Quinoa

Oh my. YUMMY! I did make a couple of changes, but this is wonderful! I added 1 yellow pepper, chopped, and used Garam Masala instead of the invididual spices..about a tsp and a half. And I used a can of crushed tomatoes instead of fresh, since my garden is a bit slow this year. I used chicken stock instead of water. This one will be a regular for me.

All-Day Apple Butter

Really great recipe! I am a Virginia girl, and we love apple butter. This recipe reminds me of home! I used Gala apples and followed recipe exactly. Beautiful brown color and the smell is wonderful. My emersion blender made it nice and smooth. Thanks again.

Ultimate Corn Bread

This was good, however it seemed like it needed something. I think next time ill try and spice it up a bit and do something with the dough that adds more flavor to it aswell. Good, cheap and simple recipe, Thanks for sharing!

Oatmeal Peanut Butter Cookies

Excellent cookies! I found myself without baking soda when I went to make these...so I completely butchered the original recipie...I used 8 teaspoons baking powder, and added 1/2 cup chocolate chips and 1/2 cut chopped walnuts, along with 2 teaspoons of vanilla (as recommended by others) and about 1/2 cup extra outmeal. They rose fine, and tasted great! I was worried the baking powder "taste" would come through but not at all! Slightly crispy outside, chewy and soft inside... Yumm!

Scallops Mascarpone

Yum! Made a few alterations for convenience, like using ready-minced garlic, dried parsley, fresh baby bella mushrooms, fresh chopped onion, fresh bell peppers instead of asparasgus, and cream cheese instead of marscarpone. Also added a little parmesan. A winner!

Tuna Noodle Casserole from Scratch

This was good, but labor intensive. Didn't really taste better than my usual recipe for tuna casserole (using good-quality organic canned cream of mushroom). Maybe I should have doctored the sauce as the other reviewers did.

Bow Ties with Sausage, Tomatoes and Cream

My boyfriend loved this dish and now claims it is his all time favorite thing I make. Along with angel hair pasta instead of bowties, I used a bit more cream than called for and i like it extra spicy with the red pepper flakes. I cannot recommend this recipe enough.

Asian Lettuce Wraps

These were really yummy!! The only thing is I wish that there would have more sauce or a dipping sauce. Doubling the sauce would have been perfect. The taste was so good though, I had to give 5 stars!!
